Carol was born and raised in Santiago. She is an entrepreneur and runs her own cookie store, Worchips Cookie Co. Carol has always had a passion for cooking, languages and culture. She often invites friends and family home and loves cooking for them using family recipes she has collected over the years. Carol is a self-taught cook who learned to cook by constantly reading cookbooks, watching cooking shows, attending culinary workshops and experimenting in the kitchen. She enjoys cooking both Chilean as well as Arabic dishes that honor her Palestinian background. Carol shares her home with her Peruvian boyfriend, Paulo, who is excited to share a few Peruvian dishes with those who would be interested in trying. In-home meal: (1-4 guests) Carol, from Chile, and Paulo, from Peru, welcome you to their beautifully decorated apartment in the heart of Providencia. You'll be greeted with a warm smile, a welcome drink, and soothing Latin music. Their passion for cooking is evident from their extensive collection of cookbooks, and they’re excited to share their favorite Chilean and Peruvian dishes while recounting stories of their upbringing. Choose from a Chilean, Peruvian, or mixed menu, with appetizers like sopaipilla (fried pastry), pebre (tomato salsa), mini empanadas, or Peruvian snacks such as cancha (toasted corn nuts), fried plantains, and olives. For the first course, enjoy palta reina (avocado with smoked salmon), Peruvian ceviche, pulpo al olivo (octopus in olive sauce), or causa limeña (layered potato dish). Main courses might include pastel de jaiba (crab casserole), pastel de choclo (corn pie), or ají de gallina (creamy chicken). End with desserts like a traditional Chilean cake, suspiro limeño (vanilla custard with meringue), or crema volteada (Peruvian flan).
Cooking experience: (1-2 guests) Join Carol and Paulo in Santiago for a hands-on Chilean or Peruvian cooking class, where you'll help prepare a traditional appetizer or dessert and a main dish. Due to the intimate size of their kitchen, most prep work will be done at the dining table, while Carol skillfully completes the meal in the kitchen, which comfortably fits two guests at a time. The cooking session lasts about an hour, culminating in a delicious meal shared together, savoring the dishes you've created. When booking, please specify your preference for a Chilean or Peruvian menu; if none is stated, the default will be a Chilean menu.

As soon as we entered Carol’s apartment she welcomed us with pisco sours as if we were just two of her friends coming over for lunch. She sat us down right away to a plate of palata reina, a delicious entree of salmon and cream cheese stuffed into a pitted avocado. It was a hefty amount for a starter, but we never complain from too much food! At first Carol asked if we would like to play our own music, but we asked her to pick something that would compliment the experience. So for the rest of our visit, Carol put on her mix of Tango, which was exactly what we needed. The presentation of the dinnerware and tableware were pleasant to the eye. Carol was just as excited about her food as we were to try it. Her personality was very welcoming and youthful, and her professionalism in the area of food was apparent. As we finished up the appetizers and beer, Carol popped opened a bottle of sauvignon blanc to give us a taste of a real Chilean lunch. Then we headed to the kitchen to begin the hands on part of the experience. We were going to be making pastel de jaiba, a blue crab and cheese gratin. The news of it was a real surprise because we had assumed we’d be having a typical beef dish. I helped by buttering up the small traditional “skillets” used for the dish. Carol prepared the mix of blue crab and bread crumbs and Bavly shredded in the cheese. It was a team effort but I think having everyone do a little of each step could add to the value. After that Carol poured in the appropriate amount of wine into the mix and we scooped the creation into the skillets and put them into the oven. We conversed about Carol’s life in Chile and our travels over wine as we anxiously waited for the pastel de jaiba to brown. The smell of crab filled the home. When they were ready, Carol torched the top of each one like a creme brulee. By far the best thing we ate in Santiago! And the wine paired perfectly with the dish. Carol was a great host and became our friend so quickly.

Had a personalized social event at this young couples apartment. We had a relaxing conversation before we started in the kitchen. Everything was perfectly planned. We prepared the food together with Carol‘s instruction. Learning so much about Chilean and Peruvian food in the process. Sat down for a wonderful meal with this couple afterwards. Every detail was perfection. Food was delicious. But it was mostly the social event that was so lovely. Spending time with this wonderful young couple was the highlight. Carol & Paulo were so warm & inviting. We felt like we were being invited to a new friends house to get to know them. We sat down to a plethora of snacks, Paulo offered us drinks & helped us relax as we began to get to know each other. After a while, Paulo guided us to learn how to make pisco sours which we enjoyed throughout the night. Carol, a baker/businesswoman outside of this business, started showcasing the different parts of the meal & walked us through how to develop the intuition around the two dishes we were making. Tasting as we go we found the right levels for the meal. All throughout this, Carol & Paulo ensured we were entertained and we talked about a variety of topics from favorite YouTube chefs, to wonderful books, & different travel experiences. I had such a blast with Carol and Paulo! They invited me into their home for some one on one cooking lessons. In their home i learned how to make a very tasty traditional dish from Chile. I really enjoyed this! Not only was the food great but the couple makes for great company and conversation. I wanted to know what life was like in Chile and we talked about this and much more. Wow!!!! This was more than a cooking class, and we can’t recommend this experience highly enough! When we arrived at her apartment, we were warmly greeted by Carol and Paulo. We started the afternoon with an appetizer of Pebre, a Chilean tomato and onion salsa served on melba toasts, just sitting, chatting, and munching. Then, Paulo took us into the kitchen, and showed us how to prepare the traditional Pisco Sour, which we enjoyed greatly. Before we arrived, Carol and I had discussed on “What’s App” that we would do a combination class of Chilean and Peruvian cooking to represent both Carol’s and Paulo’s nationalities and food heritages. We started with a Chilean main dish, Pastel de Choclo, which is like a Shepherd’s Pie, but the topping is made with starchy corn kernals removed freshly from the cob, creamed in a blender and cooked and stirred on the stove top until just the right consistency. The filling for Pastel de Choclo is a mixture of sauteed ground beef, chopped onions, spices, placed in an oven-proof dish, topped with the corn, and then baked in the oven. As we cooked, we took notes on the recipe steps so that we could replicate them back home and sipped on Chilean wine and beer. The next dish was a Peruvian “Papa a la Huancaina” which is a bed of butter lettuce, with boiled cold sliced potatoes, topped with a creamy, spicy, cheesy white sauce. Next was to enjoy the fruits of our labour at the dinner table with more wine and beer. We started with the Papa a la Huancaina, which was wonderful, then moved on to the fantastic Pastel de Choclo, and enjoyed a fresh tomato and onion salad. We spent the next couple of hours eating, drinking, talking about family and life in Chile, Peru and Canada. Before you knew it, it was getting late and time for us to return to our hotel and relax. As I mentioned in the title of the review, this was more than a cooking class. It was like visiting with family on a Sunday afternoon, and spending time cooking together. Carol and her assistant Christine were amazing! They were very friendly and knowledgeable about Chile (and various South American cuisines). Both spoke flawless English. The food was amazing! Highly recommend! I can't say enough great things about Carol! She's beautiful, wonderful, educated, well-traveled, charming, great cook, teacher and hostess. You can have Chilean food in any restaurant, but the experience of cooking in a local's home and having Carol guide you through the cooking process while telling you colorful stories about life in Chile makes this a a great way to learn about a culture and country through a local--truly a priceless experience. Our first Traveling Spoon experience was with Carol in Santiago. We were warmly welcomed into her home and given her freshly blended custard apple and wine cocktails with warm out of the oven empanadas. Both were really good, conversation was relaxed and free flowing with Carols love of food and entertaining on display. Next we helped cook a traditional crab dish, Pastel de Jaiva, and made an avocado and shrimp salad before sitting down With a glass of delicious Chardonnay from the Casablanca region. Lunch was beautifully home cooked and hearty. Desert was a family favourite, slow cooked caramelised milk custard with dark chocolate topping and homemade truffles with coffee....she packed up the truffles for later as lunch was plentiful - so go hungry.
