Your host Khmisa
Khmisa, has been a chef for 40 years, she specializes in Morrocan cuisine and pastry. She has worked for several renowned hotels in the cities of Rabat and Marrakech. Her daughter, Kawtar, graduated with a bachelor degree in hospitality and tourism. Cooking, creating recipes, learning about new flavors combinations and feeding friends and family, are a few things Khmisa and Kawtar enjoy together. And now they are excited to share their passion and secrets of Moroccan cuisine and culture with travelers from around the world.

  • .75-1 lb (300-400) grams of chicken (for vegetarian/vegan alternative use tofu and cauliflower instead)
  • 3 tablespoons olive oil
  • 2 tablespoons vegetables oil
  • 1 medium size onions, chopped
  • 2 cloves garlic, grated
  • 1 tablespoon fresh cilantro (coriander), chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon ground ginger
  • 2 teaspoons turmeric
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons sweet or smoked paprika
  • 1 teaspoon Ras El Hanout (Moroccan mixed spices) - optional
  • 1 pinch of saffron (optional)
  • 1/2 preserved lemon, or regular lemon juice
  • 2 potatoes
  • 2 carrots
  • 2 zucchinis
  • ½ tablespoon salt
  • 1 cup (1/4 liter) water
