Your host Isi
Isi has been in the food business for over ten years - creating recipes for dairy companies and restaurants, doing food styling and photography and selling spices online. She has recently started "Chili Asylum", an institution dedicated to marketing fresh chilies and chilli products sourced directly from Filipino farmers. Isi says she learned everything she knows about cooking from her Nanay (grandmother) who she watched cook fresh lunches and dinners everyday growing up. Isi loves cooking and serving the local, regional food she grew up eating. Isi enjoys collaborating with other chefs and food lovers in the food business to create new and delicious food.

  • 2-4 pieces long eggplants (if you cannot find those, you can use the big aubergine)
  • 1 red onion, chopped
  • 3-4 pieces tomatoes, any kind, chopped
  • 1 potato, chopped
  • Whole eggs (2 eggs per eggplant, if you have 2 eggplants, we need 4 eggs)
  • A few fresh herbs like cilantro, parsley, dill, whatever is available in your garden
  • Oil for cooking
  • 1/2 cup green mung beans (soaked and pre boiled)
  • 1 to 2 cups of vegetables (pumpkin, squash, eggplant, cut into cubes)
  • 1 ½ cup fresh or canned coconut milk
  • 1 red onion
  • 1 tbsp ginger
  • 5 cloves of garlic
  • 1 tbsp lemongrass
  • A couple of chili peppers, if you like spice
  • A bunch of Fresh herbs like moringa, chili leaves, or spinach
  • 2 tbsp coconut oil or any type of cooking oil
  • 1 pack of firm tofu, cut into cubes
  • 1 cup of shiitake mushrooms
  • 1 cup of oyster mushrooms or any other mushrooms you like or available, cut into cubes
  • 5 tbsp oil for frying
  • 3 cloves of garlic, chopped
  • 1 white onion, chopped
  • 1 bell pepper, red or green or yellow, chopped
  • A couple of fresh chili peppers, if you like spice
  • 1 tbsp oyster sauce
  • 1 tsp Worcestershire sauce
  • 3 tbsp mayonnaise
  • 2 tbsp calamansi juice or lemon or lime juice
  • Salt and pepper
