Ninoska is an avid traveler passionate about healthy, plant-based cuisine. She owns Ninoska’s Favorites, a vintage vehicle converted into a mobile cafe where she sells wellness drinks and foods. During an extraordinary year living off the land on a permaculture farm, Ninoska learned the art of plant-based meals and fell head over heels for the nourishing and harmonious world of Ayurveda cuisine. She is excited to treat guests to vegetarian cuisine at her home. Ninoska's cuisine is a celebration of flavors, from Indian to Caribbean. Her experience with the bold, flavorful dishes from her culture combined with her expertise in plant-based foods provides a really unique culinary experience. On days that she is available, Ninoska's partner Esther will join you for your experience.

Join your host at her simple home for a transformative vegetarian cooking class focused on Ayurvedic principles. Before your experience, Ninoska will provide a quiz to determine your dosha (body constitution). Completing the quiz will allow her to create a custom menu that harmonizes with your body type. For instance, if your dosha is "pitta" (fire element), she will prepare cooling, balancing foods like coconut, cucumber, and watermelon.
Learn to craft a nourishing, vegetarian four-course meal, encompassing a captivating appetizer, a healing soup, a fulfilling main dish, and a delicious dessert. Ninoska integrates a few slow-cooked foods in your meal and due to their therapeutic slow-cooking process, they may already be simmering on the stove upon your arrival.
After the cooking session, savor the holistic Ayurvedic/Vegetarian meal you helped prepare with Ninoska at her dining table. Your meal includes a rejuvenating mocktail and concludes with a light dessert.

Upon entering Ninoska's home, I was greeted by Ninoska’s bright smile and her small dog Tony wagging his tail. The kitchen, though small, is impeccably clean. Due to its size, the number of people in the kitchen at any given time should be limited. Before the experience, Ninoska asked me to take a short quiz about how my body and mind were feeling to tailor a menu based on the nutrients I needed. This personalized approach made the experience even more exciting. While she was cooking, Ninoska explained why she chose certain meals and how I could incorporate them into my daily life. The menu created for me was a pineapple spice mocktail, a berry and goat cheese crostini, a creamy garlic and potato coconut soup, walnut and black bean tacos with quinoa. Ninoska also prepared a mocha pudding for dessert. Ninoska spaced out each course of the meal, allowing her to explain how each dish benefited my body and to engage in deeper conversation. Her knowledge, passion for cooking and warmth made me feel incredibly connected to her. Each dish was made with the freshest ingredients, and there wasn't a single item on the menu that I disliked. I left feeling completely fulfilled. Ninoska is a perfect host in my eyes.
