Your host Lasha and Elene
Lasha and his mom are excited to teach guests how to make Imeretian Khachapuri, a traditional Georgian bread and Dolma, stuffed vine leaves from family recipes! Lasha quit his corporate job five years ago to live a more active and fulfilling life. Today, he runs a guest house, is a tour guide and offers cooking classes along with his mother, Elene. Elene is a great cook and has served as a chef for hundreds of events and banquets, cooking traditional Georgian cuisine. She learned to cook from her mother, mother-in-law and late husband. Lasha fondly remembers helping his mother in the kitchen as a child, and so he saw fit that they host together, doing something they are both so passionate about. Lasha and Elene are excited to cook, eat and share stories of Georgian customs and traditions with guests!

  • 4 cups (1/2 kg) flour
  • 1 tsp active dry yeast
  • 1 ½ cup (0.4 l) water at 30 degrees C
  • 4 tbsp oil
  • 2 eggs
  • 1 lb (1/2 kg) imeruli and/or sulguni cheese (can substitute with crumbled feta and/or shredded mozzarella)
  • Salt to taste
  • 20 grape leaves (can substitute with cabbage leaves)
  • ¾ lb ground beef
  • ¼ lb ground pork
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 10 green plums
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh dill, chopped
  • ¼ cup fresh tarragon, chopped
  • Salt and paper to taste
  • Yogurt (optional) to dip
  • Sprinkling of cinnamon powder (optional)

"I had my reservations, if an online class could come near to the real thing. But in a time of travel restrictions it can provide a window to other places. Elene and Lasha were patient chefs. I would urge people to take this class. The "Khachapuri" is an ultimate comfort food. It tastes like a hug. "
