Fabio and his girlfriend Annarella are passionate farmers who decided to take care of their families' lands 15 years ago. Meeting new people and cooking Sicilian cuisine brings them great joy! They are eager to share their love of Sicilian Mediterranean culture and its culinary traditions and to learn about people from around the world. They pride themselves on using traditional and organic methods to produce everything from extra virgin olive oil, almonds, citrus, and jams from the fruits that they grow on their bio farm. He serves dishes sourced from local ingredients and the meal is served as a "degustazione": a series of dishes that include antipasti, seasonal vegetables, pasta, and more. Slightly different from what people might consider a traditional Italian meal, Sicilian cuisine is influenced by different cultures (French, Middle Eastern, Greek and Spanish, to name a few). Fabio and Annarella are farmers and food lovers who know how to grow and use the ingredients they have. They are excited to share their culture through food and to give you an appreciation of the true cuisine of their region.

Cooking experience: (2-12 guests) Join your hosts Fabio and Annarella at their charming Sicilian farmhouse near Noto, where you’ll start with a welcome snack and drink. Take a guided tour of their biodiverse farm, discovering how they grow fresh herbs, tomatoes, fruits, and olives. After the tour, step into their kitchen for a hands-on Sicilian cooking class, learning to prepare a seasonal, farm-to-table, vegetarian meal from family recipes passed down through generations. During this 1.5-hour class, you’ll cook three traditional dishes from scratch, such as salvia fritta (crispy fried sage leaves), a fresh seasonal salad, and a main like pasta al limone. Learn insider tips and techniques for authentic Sicilian cuisine before sitting down to enjoy the meal you helped create, finished with a fruit- or nut-based dessert and a glass of limoncello. This immersive Sicilian cooking experience is perfect for food lovers seeking local culinary traditions in Noto.
Notes: If you select alcohol at an additional price, you will be served 1-2 glasses of wine produced by Fabio's father! His family has been making wine for generations. Fabio and Annarella accommodate a vegetarian diet.

Fabio & Annarella are wonderful and the location is amazing! We were the first Traveling Spoon guests to visit this new building for hosting their food experiences. We made spiral pasta which was delicious with an incredible sauce. Fabio is growing 20 different species of trees including olive, lemon, orange, carob and more. He is continually grafting all of these trees and showed us his successful results. All of his trees survive on rain and whatever groundwater there is, he doesn’t water or use any fertilizer or insecticide. This location seems to be his lab and the other two locations lower down with more shade have his major crop of olive trees. Our group of 6 couples from the United States had an amazing evening with Fabio and Annarella at their lovely farmhouse in the country side of Noto. Fabio walked us around the farm among the olive, almond and lemon trees. We made cavatelli in the courtyard while Annarella prepared some traditional dishes for us. Everything was delicious and grown on their farm. We also had wine and lemoncello made by Fabio’s father. We thoroughly enjoyed Fabio and Annarella’s company and the charm of their farmhouse and courtyard. It was the most perfect way to spend our last night in Sicily! Fabio and Anarella are excellent hosts! They have a beautiful, sustainable farm. Anarella is a exquisite cook and show us a few typical dishes of sizily.
